Chilly Fish

Ingredients:
500 gm of fish (diced)
2 onions (diced)
1 capsicum (diced)
3 green chilies (fine chopped)
4 cloves of garlic
2 tablespoons of Chilly chicken masala
2 tablespoons of Tomato sauce
2 tablespoons of Chili sauce
2 tablespoons of Soya sauce
1 tablespoons of corn flour mixed in 50ml of water
400ml of water
4 tablespoons of vegetable oil
Salt to taste
   For Marinade-
                2 tablespoons of Corn flour
                1 teaspoon of Soya sauce
                2 tablespoons of Chilly chicken masala

How to MAKE:

                Mix the fish, chilly chicken masala, soya sauce, and corn flour. Mix it thoroughly and keep for 10-15 minutes. Deep fry the fish and keep aside. Heat 2 tablespoons of oil in a pan and add the garlic and green chilly to it. Sauté it and then add the chilly chicken masala to it. Sauté and then add all the 3 types of sauces and when it comes to a boil, add the fried fish to it. After a while, add the corn flour mixed with water to it. Sauté the onions and capsicum and add this to the fish mix. After 5 minutes, add 400ml of water to it. When it boils, remove from flame and garnish with spring onion. Serve Hot!

Alter Grilled

Ingredient:
1 full grilled chicken
2 Onions (chopped)
1 Tomato (chopped)
Half a Capsicum (chopped)
3 cloves of Garlic (finely chopped)
2 tablespoons of Pepper powder
Red pepper sauce (optional)
Salt to taste
3 tablespoons of Vegetable Oil
Quarter cup of Water

How to MAKE:

                First, cut the grilled chicken into pieces. Make them as only as big as you would for a curry. Keep it aside. Now, heat oil in a pan and add the garlic to it. Once it turns brown, add the onions and sauté till it becomes golden. Now, add the tomatoes and cook till the tomato loses its raw smell. Now add the capsicum and sauté till it gets cooked. Add the salt and pepper and stir well. Now finally, add the cut chicken pieces and stir it well after adding the water. If you want it to be more spicy, add a dash of the red pepper sauce and Serve HOT!

Scrambled Calories

                     Its just the regular Scrambled Eggs with a little a Improvisation.
Ingredients:
4 Eggs
3 Onions (Finely Chopped)
2 Tomatoes (Diced)
50g of Green peas (half cooked)
Half a Capsicum (Cut along length into strips)
2 Green Chilies (Diagonally cut)
2 cloves of garlic (thin circular slices)
2 tablespoon Green Chilly sauce
3 tablespoon Tomato Ketchup
1 tablespoon Red Pepper Sauce
4 tablespoon Mayonnaise
Half tablespoon Pepper Powder
2 teaspoon of Brandy (optional – adds more flavour)
3 teaspoon Vinegar
Salt to taste
Coriander leaves for garnish
About 4 tablespoons of vegetable oil

How to MAKE:

                First scramble the eggs with a little salt and pepper and keep aside.  Then heat the oil in a pan and add the garlic. Sauté garlic for a few seconds and then add the onion. Sauté the onion till it turns golden and then add the tomatoes. When the tomato starts to sweat, add the brandy and burn the alcohol out of it. Next add the green peas and sauté till the onion and tomato achieves a sauce like consistency. Add the green chilies and capsicum and sauté till the raw flavor of capsicum is lost. Now add all 3 different sauces and half of the total mayonnaise. Stir well until a liquid is formed from the mayonnaise and add the vinegar to this. Now add the scrambled eggs, the pepper powder, rest of the mayonnaise and salt to taste and mix everything well.  Now garnish it with coriander leaves and a little mayonnaise and Serve Hot!

Masala Paneer

                           This is a specially made dish for a particular Paneer loving girl!! Also this is the first veg dish I am making!!

Ingredients:
500gms Paneer (cottage cheese) (cut into little cubes)
4 medium size Onions (diced)
2 Tomatoes (diced)
3 tablespoons of Garam masala
2 tablespoons of Coriander powder
3 teaspoons of Red Chilly powder
1/2 teaspoon of Turmeric powder
2 teaspoons of Pepper powder
Salt to taste


How to MAKE:

First sauté the onions in oil and when they turn a slight shade of golden brown, make them into a paste in a Blender. Sauté the tomatoes and when they start to wrinkle, make a paste of them in a Blender. Heat a little vegetable oil in a pan and add the onion paste. Sauté till it reduces and loses most of the water.  Then add the tomato paste. Cook the mixture till the raw smell of the tomato is lost. Now deep fry the cubed Paneer (Cottage cheese) and add this to the onion-tomato mix. Cook this for about a minute and then add all the different powders mentioned above. Stir this well and add water if a thin gravy is required. Cook it on a low flame for 5 minutes. Serve hot!

Sausage Massacre

                         This is the first ever dish that I ever created. Hope everyone likes it!

Ingredients:
                5-6 Sausages (cut it into little cylinders)
                3 Onions (Diced)
                2 Green Chillies (Diagonally cut)
                Half a Capsicum (Dice and remove insides)
                A small piece of Ginger (Finely chopped)              
                3-4 Tablespoons of Tomato Sauce/Ketchup
                4 Teaspoons of Chilly sauce
                Half a tablespoon of Pepper powder
                4 Teaspoons of Chicken Masala
                A pinch of Sugar
                2 Teaspoons of Vinegar
                3 Teaspoons of Vegetable oil
Salt to taste
Water around 100ml (optional)
               
How to MAKE:
                Firstly, heat the oil in a pan. Add the ginger and green chillies to the oil when it is hot. After about a few seconds, add the diced onion and sauté the onions till the turn to a light shade of brown. Then add the cut up sausages to the pan along with the vinegar. Sauté this mixture in the pan till the sausages cook and the onions turn golden. Then add the capsicum and sauté till the capsicum softens up.
                Now, add both the sauces and stir well. Then add pepper, chicken masala and salt to taste. Finally sprinkle the sugar over it and toss everything around in the pan till everything mixes well together. Cook on a low flame for 5 minutes and then take off flame. Serve Hot!

For gravy (optional)

                After adding all the ingredients (pan should be on a high flame), splash a little water into the pan. Care should be taken that water should not even exceed 50ml. Stir well after adding the water. Add the next portion of water after the previous addition has been well absorbed. Continue this till a required thick consistency is achieved and then cook on lo flame for 5 minutes. Serve Hot!
